Nearly all soy sauce in Japan is brewed with wheat. It's in dipping sauces, marinades, soups, glazes — almost everything. Bring GF tamari packets from home. Most restaurants will let you use your own if you explain.

It's in everything — sashimi dipping sauce, ramen broth, yakitori glaze, even rice seasonings sometimes. We brought GF tamari packets from home (the small single-serve ones). Most restaurants were happy for us to use our own once we showed the celiac dining card. This one tip changes the entire trip.
