Edinburgh was one of the easiest cities I've eaten in as a celiac. 21 GF-rated restaurants, four of them fully dedicated gluten-free, and a 10/10 on our GF safety score. Highlights: a 100% GF Brazilian crepe shop, a fully GF brewery, and a Michelin-starred tasting menu that offers GF alternatives throughout. Arthur's Seat — an ancient volcano right in the middle of Edinburgh. About 45 minutes to the summit, and the views across the city and out to the Firth of Forth are really something. On the way back down, Sugar Daddy's Bakery is Edinburgh's only fully dedicated GF bakery (no gluten on premises). Solid reward after the climb.

Edinburgh Castle — sitting on a volcanic plug in the middle of the city, with over a thousand years of Scottish history. Book online if you're visiting in summer; the views from the top across the city to the Firth of Forth are worth it. Afterwards, La Locanda on the Royal Mile does scratch-made GF pasta, GF gnocchi, and GF bread. The owner's family is celiac, so the staff really know what they're doing. 4/5 on our GF scale.

The Fairy Pools on the Isle of Skye — about 2.5km round trip from the car park and genuinely one of the most beautiful walks I've done anywhere. Go early if you can. It gets busy by mid-morning, and the midges are less aggressive before the crowds arrive. Skye was also better for GF dining than I expected — 11 restaurants tested in Portree, three of them scoring 5/5 on our GF safety scale. More on the site.

The Quiraing
The Quiraing on the Isle of Skye — an ancient landslip on the Trotternish Ridge. The circular walk is about 7km, takes 2-3 hours, and the landscape is genuinely unlike anything else I've seen in Scotland. Wear layers and bring waterproofs. The weather changes fast up here. Afterwards, The Hungry Gull near Portree has a dedicated GF fryer, GF bread for burgers, and staff who understand cross-contamination. 5/5 on our GF scale.

The Inverness Highland Games at Bught Park — caber tossing, pipe bands, Highland dancing. If your trip overlaps with a Games anywhere in the Highlands, it's worth going. Inverness has 12 GF-rated restaurants on the site, including The Kitchen (right on the river, GF clearly marked on the menu) and McBain's by the River, where staff ask if you're celiac and flag the kitchen accordingly. What I pack for Scotland as a celiac: A celiac dining card (even in English — some kitchen staff are ESL), GF snack bars for the long Highland drives between towns, and GF oat cakes since traditional Scottish ones often use non-GF oats. Also: waterproof layers, because the weather genuinely changes every 20 minutes, and comfortable walking shoes — you'll cover more ground than you expect. The Highlands can be remote between towns. Bring snacks for the road rather than counting on finding GF options in every village.

Glasgow Cathedral — medieval, atmospheric, and free to visit. The lower church is worth spending time in, and the Glasgow Necropolis behind it (a Victorian cemetery on the hill) has great views across the city. Glasgow was also better for GF dining than its reputation suggests. 10 restaurants tested, with Red Onion (dedicated GF menu) and Browns (Coeliac UK accredited) both scoring 5/5.
